I agree completely.

I do the same with just one difference: I use Linux 64 bit as host OS
instead of Mac OS X.

Much memory, 64 bit and several cpu cores are great for such a setup. I
use several virtual machines: one for internet surfing (linux), one for
email (linux), one for ms office documents (win2k), one for ab
development (win2k). And with templates for win2k and linux virtual
machines it is just a matter of a few seconds to create a new vm for
testing a new program or something else without any risk for the other
virtual machines.
