one book that comes to mind would be "The Theory of Gambling and Statistical
Logic", by Richard Epstein. Excellent and very readable tome.

The author analyzes Craps probabilities and strategies on pp. 145-150 of
that book, and then draws this conclusion: "Despite the great popularity of
Craps, its participants are offered no significant strategy other than
selection of the wager with the least unfavorable odds. Because of its rapid
pace, however, the game has attracted a plethora of 'systems'... Like the
Roulette ball, the dice possess 'neither conscience nor memory' and are
democratic to a fault."
