Ken,

1. Memory consumption can be controlled from 
Tools->Preferences->Data
"in-memory" cache.

The formula is easy: 32 bytes per quote per symbol.
If you have 30000 quotes per symbol it requires almost 1 megabyte per symbol.

If your "in-memory" cache setting is higher than 1000
then it will allocate 1000MB.

So you may want to decrease "in-memory" cache setting
to decrease memory consumption.

2. 15 minutes to save 1000 megabytes of data is not that much.
It is actually one megabyte per second writing speed.

3. "purging" old data is done automatically once the number
of bars in given symbol exceeds "number of bars to load" set
in File->Database settings.
