 HAMBURGER STEAKS ROQUEFORT WITH PANCHO SAUCE
 
 Saute:
 I med. Onion chopped in
 3 T. salad oil
 
 Add to:
 2 cloves garlic minced
 2# ground beef chuck
 2 eggs
 1 T. chopped parsley
 1 t. salt
 1/4 t. pepper
 
 Mix all ingredients thoroughly.
 
 Blend:
 1/4 cup crumbled roquefort cheese
 2 T. soft butter
 2 T. brandy
 
 Shape meat mixture into 4 giant ovals--add cheese  mixture into hole in 
center
 Cover hole--brush with oil--season with salt and pepper.
 Broil or grill to desired doneness.
 Serve with Pancho Sauce.
 
 PANCHO SAUCE:
 Combine:
 1/2 cup chili sauce
 1 cup catsup
 1 T. wine vinegar
 2 t. Worchestershire sauce
 3 drops Tobasco
 1/2 t. ground ginger
 1 T. dry mustard
 1/2 cup mayonnaise
 1 t. prepared horseradish
 2 T. pineapple juice

HAMBURGER STEAKS ROQUEFORT WITH PANCHO SAUCE

Saute:
I med. Onion chopped in
