If when you say different directories for different sets of data then
you can't do that either.  Only one will work at a time and the backup
or copy will stay just like it is as it will not be connected to real
or delayed data.  You simply add as many symbols as your data feed
will allow if you want more data.

I made a little test.  I backed up the C:\Program Files\Omega 
Research\Server directory somewhere.  I made a couple of changes to the Dow 
Jones index and a couple of stockes.  When I restored the C:\Program 
Files\Omega Research\Server directory, the changes were gone.

So IMO, you do not need to have different installations of GS.  Just 
different dirs for diferent sets of data.
