MetaStock's Downloader Manual Version 7.0 (which, by the way, is what ships with version 8.0 too) has excellent documentation for the entire data conversion processes beginning on page 72. I found the Dow Jones Industrial averages on the Internet in text format for the years of about 1920 through 1990 (close only, until about 1933 or so) and downloaded that. Then I opened it with MS Excel, and went through the conversion process for MetaStock as described in the manual and ended up with a chartable data file.
