Brian,
My recommendation is for Mozilla Thunderbird[1]. It does mail very well
without the associated bloat of Outlook. It's had fewer security issues
than Outlook and stores it's mail and contacts in standard formats. It
also stores the contact list and each mail folder separately, rather
than a monolithic proprietary format like Outlook.
If you want calendaring Mozilla also has Sunbird and Lightning[2], one
is stand-alone while the other integrates with Thunderbird. The can
also be made to sync with Gmail's calendar as well as some others[3].
If you prefer IMAP instead of POP (IMAP stores mail on the server, POP
downloads and manages it on the client), Thunderbird does it better than
Outlook.
If you have Gmail, you can use the IMAP feature to access your Gmail
account with Thunderbird instead of having to only use the web
interface[4]. I just checked and Yahoo seems to be testing IMAP access
as well[5].
Last, Thunderbird has clients for Windows, Linux, and Mac so you covered
on multiple OSs.
