This can be done by exiting AB and editing the layout in a text editor,
but you must be careful not to cause problems. Best to make a copy of
your layout in AB and edit that one instead of the default.
Go into the folder with your database. Find the layout folder. Edit the
layout. It will help you to name your tabs first so they are
recognizable. I would only use this to re-order sheets. It's easy enough
to delete all the charts on a sheet in AB.

OK I'm guessing you can't actually do any of these things with sheets.
Can you delete a single existing sheet then ?
Can you re-order the sheet layouts along the bottom ?
I've not been able to find much on sheets
