Yup, Ok lets go through a few things.....

I run a few PC's also.

My main PC is only 850mhz. And I run x2 80gb. I have no bios problems,
I am surprised your 900Mhz machnes does have issues with HD bios.

And NTFS is definatly the better way to go. Convert over as soon as your 
systems are stable.

Also - It crashing the way it does - Would indicate to me (1st up anyway) 
that you may have a Hardware IO fault in the ME machine.

Try dropping the speed of the HD transfer mode. It's under the bios settings.
What is it currently set to? This is very important - as slightly damaged 
cables -
can disrupt the higher transfer rates. (Even a Kink in the cable can do this.)

If you find this helps the install - Perhaps Buy a couple of brand new cables.
and also run at lower xfer - for better reliability.

Try also putting some extra heatsinks on some of those chips on the 
motherboard.
Go to Jaycar or Dicky's and pick up some small heatsinks and glue em on.
This is Australia - It does get Hot - And computers do go Pffft!

Be sure there is plenty of airflow in the PC cases.
And Check the Temperature of your running Harddrives. Feel them with your hand.
if they feel '"Hot" - then they are probably being damaged.
Upto "Pretty Warm" is ok.
If they start to get or are "Too Warm" then Load some heatsinks on them or 
buy some HD Fan bays.

For me:
Turned out I had a faulty MB. The Chipset got a bit hot one day - Then 
caused intermittant errors and crashes for the next couple of months - 
Untill  I realised the MB realy was screwed and pulled it!

  Replaced for $70 and now runs great.
(May I suggest Jetaway MB as a good inexpencive but reliable MB.)

Other things that could be causing you grief (That you can check), Would be 
RAM, Try pulling out half and swapping each stick in. Check the Contact 
pins are clean - Use a Soft White rubber to clean them if not.
Don't go running round the carpet with socks on before you do this ;-)

HD/CD Cables, Both power and data cables. Make sure Power cables pins are 
not streched (Female pins) causing loose power connections.
And kinks in Ultra ATA data cables can cause problems. Simply replace!!!

Lastly - No it should have nothing to do with the Volume types.
