This is an interresting idea however I doubt that Frenchs will ever put it
in practice. It would be barely feasable. Frenchs don't pay very much
attention to the grapes but to the soil. Most of the  good French wines are
blend (I think that ALL of the Bordeaux are blend) and because the exposure
from a piece af land can be pretty different from the sun exposure of an
another piece of land 200 yards away, for a same vintage of a wine from the
same area prices can be pretty different. There is not one standard of
quality that is a must to trade a futures contract. However you can have a
pretty accurate idea of where prices are heading by monitoring auctions like
the famous on for Bourgogne of the "Hospices de Beaune".
