1 lb. bowtie pasta (cooked al dente)
4 ripe tomatoes -diced
1 c. pitted & sliced kalamata or nicoise olives
2 T. capers
2 garlic cloves minced
1/2 c. chopped fresh basil (or parsley)
1/2 c. extra virgin olive oil
2 T. balsamic vinegar
1/2 c. toasted pine nuts (lightly browned in frying pan or toaster oven)
It's great just like that---or topped w/ goat cheese, roquefort or
gorgonzola. Enjoy!
