I found the solution this afternoon.  If you find yourself faced with the
same problem, the following procedure will allow you to change the default
for the First Date entry on the Settings tab of the Format Symbol dialogue:

1). Click on the View menu.
2). Click on the Chart Options at the bottom of the list on that menu.
3). That brings up the Options dialogue.
4). Select the Symbol tab.
5). Near the bottom of that tab you will find a section that allows you to
set Compression defaults.
6). Click on the down arrow beside 1 tick, and scroll down the list till you
find Daily.
7). Click on Daily.
8). Type the number of days that you want to go back (actual calendar
days--NOT trading days regardless what the documentation might claim.)  If
you want 2 years, type 730 (2 x 365).
9). Click OK.

Now when you examine the First Date Entry on the Settings tab of the Format
Symbol dialogue, you will find the default for that date entry has been
changed according to your setting in 8). above.
