All things being equal, most applications will perform better on Workstation
than on Server for a very simple reason: memory.  Server loads more
processes into memory for managing a network and so has less memory left
over for your applications.  There really is no difference between
Workstation and Server except for these extra management processes and some
Registry settings which are tweaked differently.  Use NT Workstation.
