You wud need to go one step at a time then. Use mimansoor's free utility, which should be available in the files section.
Convert your entire database into text format. Then use a text editor like editplus. You can download an evaluation version from its website.
Or excel, if the text data files are lesser than 65536 lines. Add whatever you want, and then reconvert it back to MS.

I'd thought of this but I want to carry across all the data too. As
far as I can tell it is not possible to copy all the symbols from my
database, change them, and then re-attach them to the data.
