Another way (which I assume still works with the 4.99 beta version) 
is to select "Symbol" and then "Organize Assignments" and then just 
select all the symbols from "Market" or "Groups" or whatever is 
convenient, and then "Delete".  Then EXIT Amibroker.  When it asks 
you if you want to save changes, DO NOT save the changes.  For some 
reason this deletes all of the quote data but retains the symbols, 
industry groups, etc.
