Any disk image backup software can do the backup of the whole hard drive or individual partitions. You can have the backup image stored on the same hard drive in a secure partition (inaccessible by Windows or any other OS) or on an external hard drive (the safest option).
Acronis True Image was considred the best disk image application a few months back, when I was shopping around for it. It was said to be better than Norton Ghost, the closest competitor, but of course these things change all the time:
