In my experience, Save on Exit always saves whatever layout you have open as 
the default. So now I don't use default layout anymore, I am in the habit of 
always saving my open layout manually before opening another or exiting AB, 
and always opening the layout I want when I start AB. I always include the 
layout name in the 1st tab when I create a new one so I can identify which I 
have open, but be careful you don't end up confusing it with the default 
layout which will be the same as the last layout you worked on. You can turn 
off Save on Exit, but I leave it on as a backup in case I screw up. I 
believe a template is one window with all its sheets, while a layout can 
include multiple windows/templates.
