Of course you can. Data is filtered for display only. In database everything
is unfiltered. Just use View->Intraday->24 hours trading to get unfiltered.

Of course you can do that. Since 4.53 there is PER-GROUP setting
of sessions. Each of 256 groups can have DIFFERENT session start/end times.
Go to Symbol->Categories , "Groups" tab and rename some empty group to "YM".
Then check "Group uses own intraday settings" box and click "Intraday settings"
button. Select specific time session settings for this group.
Then go to Symbol->Information and select "YM" group for "YM" future contract.
