I don't know about user defined fields, but there is nothing to stop
you from putting other data in the existing fields.

For example, I have the following data in the OHLCV fields under
a "dummy" symbol.

Fed Reserve Discount Rate
^VIX Close
# Stocks > 50 dMA
# Stocks > 200 dMA
NYSE Close

I maintain a separate database for stuff like this and all the
display work needs to be custom in nature and you need to keep
track of the "true" nature of the data in the fields.  I/m now 
tracking 6 dummy symbols with about 5 data items in each one without
any real difficulties.
